Toss the sliced beef with baking soda, let rest for 15 minutes, then rinse and pat dry.

Add soy sauce, cornstarch, oil, and water, mix well, and let marinate for 10–15 minutes.

Combine the black bean paste, water, and sugar.

Heat a wok over high heat, add oil, then add the beef in a single layer, sear for 30 seconds, and remove.
