Method

Rinse the pearl barley thoroughly and cover with cold water, let soak for 3 hours, then rinse again under running water in a sieve.

Bring the milk to a boil in a saucepan and add the grain.

Add half a tablespoon of butter and salt, simmer on low heat for 20-30 minutes until the grains are completely softened.

Remove the pan from the heat and add the remaining butter.

Mix the eggs with the sour cream and stir into the porridge.

Transfer the porridge to an ovenproof dish (if your pot isn't oven-safe) and place in a preheated oven at 180°C until a golden crust forms.
