Method
Whisk the softened butter until smooth.
Stir the baking soda into the sour cream, let it sit briefly until it begins to react, then add it to the butter and mix until uniform.
Gradually fold in the flour to form a soft, pliable dough. Cover with a towel and set aside.
For the filling, combine the cottage cheese, granulated sugar, vanilla sugar, and flour.
Divide both the dough and the filling into an equal number of matching portions (we got 16 pieces).
Roll each piece of dough into an oval shape, place a log of filling along the long edge, fold the dough over, pinch the edges to seal, and shape into a crescent or banana.
Arrange on a baking sheet and bake in an oven preheated to 180°C (350°F) for about 15 minutes until golden brown.
Let the finished cookies cool down and dust with powdered sugar.
