Banana and Quark Oatmeal Crepe

Method
In a deep bowl, whisk the egg with half of the banana (mashed with a fork), half of the sugar (or sweetener), and a pinch of salt until smooth.
Add the rolled oats and mix thoroughly. Let the mixture sit for 7–8 minutes so the oats soften slightly.
Preheat a skillet over medium heat and lightly grease it with oil (you can use a non-stick pan without oil).
Pour the batter into the skillet and smooth it out with a spatula. Cook the oat crepe for 3–4 minutes on one side until golden brown. Carefully flip the crepe over and cook for another 2–3 minutes.
While the crepe is cooking, prepare the filling: mix the quark with the remaining sugar (or sweetener) and a pinch of salt. Slice the other half of the banana into thin rounds.
Remove the finished oat crepe from the skillet and place it on a plate. Spread the quark mixture over one half of the crepe and top with the banana slices. Cover with the second half of the crepe or roll it up.
