Method

Coarsely grate the zucchini, carrot, and potato. Season with salt, let sit for 5 minutes, then thoroughly squeeze out any excess liquid.

Add the eggs, finely chopped parsley, flour, black pepper, and a bit more salt if needed to the vegetables. Mix well until uniform.

Divide the mixture into equal portions and shape them into small patties. Make an indent in the center of each one.

Place the patties on a baking sheet lined with parchment paper. Put some grated cheese and a cherry tomato half into each indent.

Bake in an oven preheated to 180°C (350°F) for 25–30 minutes, until the cheese is melted and golden brown.
