Coat the sweet potatoes with olive oil and salt, and bake them whole in the oven at 200°C (400°F) for about 45 to 60 minutes.

Slice the sweet potatoes in half, fluff the flesh with a fork, and mix it with butter, a portion of the grated cheese, and spices; top with the remaining cheese, return to the oven for 5 to 10 minutes, and garnish with fresh herbs.
