Baked Cutlets with a Melted Cheese Crust
Juicy chicken cutlets made from breast and thigh fillet, topped with a crispy cheese and mayonnaise crust, baked in the oven. The dish turns out tender on the inside and appetizing on the outside.

Method
Sauté the onions in vegetable oil until golden brown, transfer to a bowl, and let cool.
Add milk to the bread, stir, and let it soak for a couple of minutes.
Pass all the ingredients for the minced meat through a meat grinder, alternating between them.
Add spices to the meat mixture to taste and knead until smooth. If the mixture is too wet, add breadcrumbs to reach the desired consistency.
Divide the meat mixture into 120g portions to shape the cutlets.
Prepare a baking sheet lined with parchment paper and grease it with vegetable oil, then shape the cutlets directly onto the baking sheet using a mold.
Grate the cheese, mix it with mayonnaise, egg, and chopped herbs, and combine well.
Top each cutlet with one tablespoon of the cheese mixture, distributing any remaining mixture evenly over the surface.
Bake in a preheated convection oven at 170°C for 15 minutes.
