Method

Coarsely grate the carrots or use a Korean carrot shredder.

Sauté the onions and carrots in a Dutch oven or heavy-bottomed pot, then add the tomato paste.

Sauté the vegetables with the tomato paste and pour in the wine or boiling water. Season with salt and pepper. Simmer for 3 minutes—and the sauce is ready.

Wash and clean the fish, trimming the fins. If there is roe, you can bake it with the fish.

Coat the bottom of a baking dish with a little vegetable oil, lay down half of the vegetables, and add the chopped garlic.

Place the pieces of fish on top of the vegetables.

Cover everything with the remaining half of the vegetables. Cover the dish with foil and bake in the oven at 425°F (220°C) for 45 minutes.
