Method
Fillet the pollock, cut into portion-sized pieces, season with salt, black pepper, and fish seasoning.
Heat a skillet with olive oil. Pan-fry the pollock fillets over medium heat on both sides until half-cooked.
In a separate bowl, combine the sour cream, finely chopped dill, crushed garlic, and a pinch of salt.
Pour the prepared mixture over the fish in the skillet, reduce the heat, gently toss the fish in the sauce with a spatula, cover, and simmer for about 15 minutes.
Drizzle with lemon juice, adjust salt to taste, and serve alongside a light salad.
