Method

Slice the eggplant into rounds and soak them in water.

Slice the potatoes into rounds, the onions into half-rings, and chop the garlic roughly. Slice the tomatoes into rings and cut the peppers into strips.

Pour oil into a pot, lay down half of the eggplant, and season with salt, pepper, and herbs.

Add half of the onions and green beans. Toss in half of the bell peppers and garlic, adding a little salt. Layer the potatoes on top, seasoning with salt and pepper. Arrange the tomatoes and a bit of herbs with garlic, lightly salting.

Repeat the layers in the exact same order. Pour in 50 ml of warm water, cover with a small plate and then the lid.

Simmer on low heat for 50–60 minutes.
