Avar Khinkhal

Method

Boil the meat and potatoes. You can cook them together or separately.

Mix sifted flour, baking soda, and kefir to make the dough.

Let it rest for 10 minutes.

Divide the dough into several pieces and roll each one into a sheet about 1.5-2 cm thick.

Cut into diamond shapes.

Drop the khinkhal into boiling water and cook on medium-high heat with the lid tightly closed.

Stir occasionally as it comes to a boil while cooking.

As you remove the cooked khinkhal, poke each piece with a toothpick to release the steam.

For the sauce, mix sour cream and garlic, season with salt and pepper to taste.
