Assorted Pickled Vegetables with Vodka (No Sterilization)

Crunchy preserved cucumbers, tomatoes, and zucchini with a splash of vodka to help them keep. A fantastic winter prep that comes together without the hassle of long jar sterilization.

Method

Layer the clean, dry vegetables alternately into sterilized jars (washed and heated in the oven or microwave).

First, place half of the spices at the bottom of the jars, cutting the garlic cloves into 3-4 pieces.

Top the cucumbers and tomatoes with the zucchini and the remaining spices.

Pour boiling water into the jars, cover with sterilized lids, let sit for 10 minutes, then drain the water back into a pot.

Stir the sugar and salt into the water, bring to a boil, add the vodka and vinegar, and bring back to a boil.

Pour the hot brine over the vegetables in the jars and seal tightly with lids.

Turn the jars upside down, wrap them in a blanket, leave until the next day, and then store them anywhere you like.
