Method

Slice the slightly frozen beef into thin sheets.

In a bowl, combine the beef with salt, pepper, starch, egg yolk, 2 tbsp soy sauce, and 1 tsp sugar—mix thoroughly and marinate for 1 hour.

Heat a skillet with vegetable oil over high heat. Sear the meat in batches for 10–15 minutes until lightly browned—remove from the skillet and set aside.

In the same skillet, sauté the onion and bell pepper for about 2–3 minutes—they should soften while retaining some texture.

Return the meat to the skillet, add minced garlic, thinly sliced chili pepper, and the remaining soy sauce. Quickly toss everything together for 1–2 minutes until the sauce thickens and the vegetables absorb the flavors.

Remove from heat, garnish with sesame seeds, and serve hot.
