Aromatic Marinated Chanterelles

Method

Boil the chanterelles until tender, then drain in a colander. Roughly chop the onion and garlic.

Combine water, vinegar, and spices, bring to a boil, and simmer for 5 minutes.

Pack the mushrooms, onion, and garlic into clean jars, pour the marinade over them, and let stand for 5 minutes.

Pour the marinade back out, bring it to a boil again, and pour it back over the mushrooms.

Process the jars in a water bath for 15 minutes, then seal tightly.
