Method

Trim the white bitter bases off the rose petals. Rinse them thoroughly in cold water and drain well.

Place the petals in a saucepan, add the lemon juice, and pour in the water.

Bring to a boil and simmer on low heat for 15–20 minutes until the petals lose their color into the water.

Strain the liquid through a fine-mesh sieve or cheesecloth, squeezing the petals thoroughly to extract all the liquid.

Add sugar to the infused rose water and simmer on low heat for another 20–30 minutes, stirring occasionally, until the syrup thickens slightly.

Pour the finished syrup into sterilized jars or bottles and store in the refrigerator.
