Method
Sauté the onion and garlic in olive oil.
Add the short-grain rice and toast together.
Pour in water or white wine and let it reduce.
Gradually add the chicken broth and cook the rice until tender, seasoning with salt.
Fold the butter and grated Parmesan into the cooked rice, and let it cool.
Shape the rice into balls, stuffing a piece of mozzarella inside the center of each one.
Dredge each ball in flour, dip in beaten eggs, and coat in breadcrumbs.
Deep-fry the arancini in plenty of vegetable oil until golden brown.
