Apricots in Syrup Without Sterilization

Method

Rinse the apricots, halve them, and remove the pits—use only firm fruit.

Bring water to a boil in a pot, add sugar and lemon juice, and stir until the sugar dissolves completely.

Add the apricots to the boiling syrup and cook for exactly 1 minute.

Fill sterilized jars with apricots about two-thirds full and loosely cover with lids.

Bring the syrup back to a boil and immediately pour it over the apricots, then seal the jars.

Flip the jars upside down, wrap them in a towel or blanket, and let cool completely. Store at room temperature.
