Method

Use smooth, high-fat quark. If your quark is grainy, it's best to press it through a sieve or blend it until smooth.

Preheat the oven to 175°C (350°F).

Whisk the eggs with the sugar, vanilla sugar, and salt until fluffy and pale, then beat in the melted butter and quark until completely smooth.

Fold in the flour mixed with the baking powder and sifted, using a spatula to gently bring together a soft dough (do not overmix). The batter should have the consistency of thick sour cream.

Spread the batter evenly into a parchment-lined baking pan. Arrange the apricot slices neatly on top.

Bake at 175°C for about 40–45 minutes; baking time depends on your oven's quirks (check for doneness with a wooden skewer).
