Method

Rinse your apricots, halve them, pit them, and layer them in a stainless steel pot flesh-side up, sprinkling sugar between the layers.

Cover and refrigerate overnight so the apricots release their juice.

The next day, set the pot on the stove, bring to a boil while stirring to dissolve the sugar, and skim off any foam.

Add the juice from 1 lemon, boil for 5 minutes, and let it cool.

Bring it back to a boil for another 5 minutes, stirring, and cool again.

One final 5-minute boil, then pour into sterilized jars.
