Method

Wash the apricots thoroughly and pat them completely dry with paper towels.

Next, carefully slit or cut the fruit in half and remove the pits.

Crack open the apricot pits to extract the kernels. Tuck a kernel back inside each apricot half.

Transfer the prepared apricots along with the sugar into a pot. Let them sit for a couple of hours so the apricots release their juices, then place over medium heat.

Bring to a boil and cook for about 5 minutes. Remove from heat and let cool completely at room temperature.

Now, fish the apricots out of the syrup and simmer the syrup separately. Bring it back to a boil and pour it over the apricots. Repeat this process 3 to 5 times until the syrup thickens.

On the final round, bring the syrup to a boil, add the lemon juice, and simmer over low heat for 2 to 3 minutes.

Ladle the hot jam into sterilized jars and seal tightly with clean, dry lids.
