Method

Wash the apples, remove the stems, cut into quarters, and core them. Dice 500 g of the flesh into small slices and immediately place them in water with citric acid to prevent browning.

Once all the apples are prepped, drain the water, distribute the slices evenly into clean jars, and mix with sugar or pour the sugar on top.

Place the jars in a sterilizing bath, wait until the apples soften and release their juices, then top off each jar with another half to whole apple to fill any empty spaces.

Once the jars are filled with juice, remove them, seal with sterile lids, turn upside down, and wrap in a blanket until completely cooled.

Store at room temperature or in a cellar.
