Method

Peel the apples and slice them into wedges.

Toss the apples with lemon juice, zest, cinnamon, and a pinch of salt.

Arrange the apples in a single layer on a baking sheet lined with parchment paper and sprinkle evenly with sugar.

Bake in a preheated oven at 120-130°C (250-265°F) for about 30 minutes until tender, then let cool completely and drain in a sieve.

Whisk together the egg, vinegar, and ice-cold sparkling mineral water.

Sift the flour into a mixer bowl, add salt, and sugar, and combine.

Add the cold cubed butter and mix until the pieces are the size of peas.

Pour in the liquid mixture, wait until the dough comes together, and shape it into a ball.

Divide the dough into two portions, roll out circles of different thicknesses between sheets of parchment paper, and chill in the refrigerator for 1 hour.

Place the first dough circle into a pie dish, add the filling, and chill.

Cut out decorative shapes from the second dough circle using pastry cutters, arrange them over the filling, and chill the pie for 30 minutes.

Bake in the lower third of the oven at 180°C (350°F) for 20 minutes, then at 175°C (350°F) for 30-40 minutes.
