Method
Whisk the eggs with sugar and vanilla sugar until light and foamy.
Add the salt, milk, and melted (yet slightly cooled) butter, then mix well.
Sift the flour with baking powder and gently fold it into the egg and milk mixture until you have a smooth, thick batter.
Peel and core the apples, then dice them small or grate them on a coarse grater—squeeze out any excess juice slightly if needed.
Fold the apples into the batter. The consistency should resemble thick sour cream—add a splash of milk or a bit of flour if necessary.
Heat a skillet with a little oil over medium heat. Spoon the batter in to form fritters and fry for 2–3 minutes on each side until golden brown.
Transfer the cooked fritters to a paper towel to remove excess oil, then serve warm with honey, sour cream, or jam.
