Peel the apples and dice them. Mix with sugar, cinnamon, and starch. Microwave for 3–4 minutes and let cool (skip heating if you prefer a crunchy filling).

Melt the butter and let it cool. In a bowl, whisk together the brown sugar, vanilla sugar, butter, and egg until smooth.

Fold in the flour, baking powder, and a pinch of salt to form a soft dough. Gently fold in the drained and cooled filling.

Shape into walnut-sized balls or slightly larger, place on a parchment-lined baking sheet, and press down slightly on top.

Sprinkle each cookie with a cinnamon-sugar mixture and chill in the freezer for 20–30 minutes—this helps them hold their shape and creates a nice crinkled texture.

Preheat the oven to 400°F (200°C). Bake for 20–22 minutes until golden brown. Let cool on a wire rack—the cookies will settle and firm up slightly.
