Wash, peel, and dice the apples into small cubes.

In a bowl, combine the quark, apples, raisins, cinnamon, and sugar, and gently toss to mix.

Roll out the dough to a thickness of 5–6 mm and arrange the filling on top.

Roll it up tightly and brush with an egg yolk.

Bake at 160°C (320°F) for about 30 minutes in a preheated oven.

Let the finished strudel cool slightly, garnish with mint, dust with powdered sugar, and serve with tea.
