Apple and Lemon Jam

Method
Wash the apples, cut them into quarters, remove the cores, and weigh them.
Grate the apples using the coarse side of a box grater (if the apples are fresh and juicy, you can leave the skin on).
Cover the apples with sugar, bring to a boil, then reduce the heat and simmer on low for about an hour until done.
Right at the end of the cooking process, zest the lemon using a zester or a fine grater, add the zest to the pot with the apples, squeeze in the lemon juice, and stir well.
Once done, pack the hot jam immediately into pre-prepared dry jars, seal tightly, and wrap them up until completely cooled.
