Apple and Grape Jam

Method
Wash the apples, cut them into pieces, remove the cores, and slice into wedges.
Remove the grapes from the stems and wash them.
Put the apples and grapes into a heavy-bottomed pot, add sugar, give it a gentle shake, pour in the water, and shake gently again.
Place over heat, bring to a boil, and simmer for about 7 minutes, then remove from heat and let cool.
Stir in the ground ginger and cinnamon sticks, bring back to a boil, and simmer for 5 minutes, then cool again.
Repeat the heating and cooling cycle 4–6 times until the jam turns amber and reaches your desired thickness.
Remove the cinnamon sticks, bring the jam to a boil one last time, ladle into hot sterilized jars, seal, and leave upside down until completely cooled.
Store in a cool place.
