Method
Rinse the apples, cut them into pieces, remove the cores, and slice into wedges.
Remove the grapes from the stems and rinse them.
Put the apples and grapes into a pot, add sugar, give it a gentle shake, pour in water, and shake gently again.
Bring to a boil over medium heat and simmer for about 7 minutes, then remove from heat and let cool.
Stir in the ground ginger and cinnamon sticks, bring back to a boil, and simmer for 5 minutes, then cool again.
Repeat the heating and cooling cycle 4–6 times until the jam turns amber and reaches the desired thickness.
Remove the cinnamon sticks, bring the jam to a boil one last time, pour hot into sterilized jars, seal tightly, and leave upside down until completely cooled.
Store in a cool place.
