Method

Softens the butter at room temperature.

Beat the butter and all the sugars together using a paddle attachment on medium speed for 3 minutes until light and fluffy.

Add the eggs one at a time, continuing to beat.

Stir in the vanilla.

Whisk together the flour, salt, baking soda, and baking powder.

Fold the dry ingredients into the dough and mix just until combined, being careful not to overmix.

Gently fold in the chopped chocolate.

Divide the dough into 50g portions and roll into balls.

Chill in the refrigerator for at least 8 hours (overnight is best).

If you need to bake them faster, chill the dough for at least 30 minutes, then roll into balls and flash freeze for 10 minutes.

Bake straight from chilled at 175°C (350°F) with no steam and low fan for 9-11 minutes, until the edges are golden and the center remains soft.

Let the cookies rest on the baking sheet for 10 minutes to set.
