Method

Rinse the almonds, cover with water, and let soak overnight.

Drain the almonds, transfer to a blender, add 3 cups of water, the date, and a pinch of salt, then blend until smooth.

Strain through cheesecloth or a nut milk bag to extract the almond milk.

Make cookies using the leftover pulp by mixing it with the banana, egg, cinnamon, and salt.

Arrange on parchment paper and bake for 20 minutes at 180°C (350°F).

Once the cookies have cooled, dip half of each in milk chocolate and let them set in the fridge.
