Method

Lay out all your ingredients except the flour on the counter ahead of time so they come to room temperature.

Stir the yeast into the milk, mix it well, and make sure the yeast is actively bubbling in the milk.

In another bowl, whisk together the soft butter, eggs, egg yolks, and sugar until smooth.

Add the yeast mixture, raisins, and mix again, then cover the bowl with plastic wrap and let it sit for 8 to 12 hours.

In the morning, add the cognac, salt, vanilla sugar, and sifted flour to your mixture and stir with a spatula or large spoon.

Knead the dough in the bowl for about 10 minutes.

Divide the dough among kulich molds brushed with oil, filling them about halfway, cover with a towel, and let rise for 1.5 to 2 hours until doubled in size.

Place the molds in a preheated 340°F oven on the second rack from the bottom and bake for 30 to 35 minutes.
