Method

Wash the potatoes and place them on the air fryer rack. Bake at 180 °C (350 °F) for 1 hour.

While the potatoes are baking, finely dice the ham, cheese, and capers (or pickle).

Remove the potatoes and let them cool slightly. Cut them in half lengthwise.

Carefully scoop out the flesh with a spoon, leaving a 5–7 mm rim.

Transfer the potato flesh to a bowl. Add the butter and mash thoroughly with a fork.

Add the sour cream, mustard, diced ham, cheese, capers, dried celery, and black pepper, then mix well.

Stuff the potato halves generously with the filling, mounding it high.

Place the potatoes back into the air fryer. Bake at 180–200 °C (350–400 °F) for 5 minutes.

Serve hot.
