Wash and thoroughly dry the bell peppers. Place them whole onto the air fryer rack. Cook at 200°C (400°F) for 20–25 minutes. The peppers should become tender and develop charred spots on the skin—don't worry, this is exactly what you want for that subtle smoky flavor!

Transfer the hot peppers into a sealed bag or a covered deep bowl and let them steam for 10 minutes. Afterward, the skins will peel off effortlessly. Remove the stems and seeds, then slice the peppers lengthwise into wide strips.

Slice the garlic thinly. Whisk together the oil, vinegar, salt, and dried herbs.

In a clean, sterilized jar, layer the peppers, scattering the garlic slices between them. Pour the oil marinade over the top, making sure the vegetables are completely submerged.
