Method

Combine the cottage cheese, separate the egg into yolk and white, add the yolk to the cottage cheese and about half of the egg white into the dough as well.

Add 50 grams of sugar, butter, and about half of the flour first, then the baking powder, mix, and gradually add the remaining flour (not all at once) so that the dough does not stick to your hands.

For the filling, chop the nuts, add the sugar and the remaining egg white, and mix everything together.

Dust a board with flour and roll out a rectangle 0.5 cm thick.

Place the filling in the center and spread it in a thin layer, leaving the edges clear so you can fold the dough from both sides to form a neat rectangle.

Lightly roll the dough lengthwise with a rolling pin without pressing too hard, and cut the dough into 10 strips.

Twist each filled strip of dough, dip the bottom part of the cookie in flour, and place it on the lower rack of the air fryer.

Cook on the 'Multi-cook 180°C' setting for 10 minutes; the second batch can be baked in just 8 minutes.
