Method

Run all vegetables and fruits through a meat grinder or pulse in a food processor until finely chopped.

Transfer the mixture to a pot and simmer for 1 hour over medium heat.

Stir in the sugar, salt, vinegar, oil, and minced garlic.

Continue cooking for another 15 minutes, stirring constantly.

Ladle the hot adjika into sterilized jars and seal them.

Invert the jars and wrap them up well until completely cooled.
