A spicy vegetable preserve for winter storage made with zucchini, apples, and tomato paste. Perfect as a sharp appetizer or sauce for meat dishes.

Method

Wash the vegetables and apple.

Remove seeds from the pepper, peel the zucchini and remove seeds if needed, peel the apple and remove the core.

Run the zucchini, pepper, apple, and garlic through a meat grinder, add the tomato paste, mix well, and transfer to a pot.

Pour in the oil, add salt and sugar, and simmer over low heat for 40–50 minutes, stirring occasionally.

Then add the vinegar and ground chili, stir, and cook for another 10–15 minutes.

Let the adjika cool, then transfer to clean glass jars.
