Method

Mix the flour, yeast, sugar, and salt together.

Add the warm sunflower oil and knead the dough for 5 to 10 minutes until elastic.

Cover the bowl with plastic wrap and let it rise in a warm spot for 1-2 hours.

Shape the khachapuri with your fingers, place grated cheese in the center, pinch the edges together, and flip it over.

Make a slit in the center with a knife and spread open the edges, add more cheese, cover with a towel, and let the dough rest for about 10 minutes.

Bake in a preheated oven at 230-240°C for 10-12 minutes.

Wash the egg, separate the white from the yolk, take the khachapuri out of the oven, use half an eggshell to press a well into the center of the cheese, pour in the yolk (you can include the white as well), and return it to the oven for another 1-2 minutes.

Top with a pat of butter.
