Achichuk (Shakarob)

Method

Slice the onions into half-rings so paper-thin that you can literally read a newspaper through them. Once sliced, you can submerge them in ice water for a couple of minutes to tame the harsh bite, then squeeze them out thoroughly.

Slice the tomatoes either in your hand or on a board, but make sure they are cut into very thin, almost translucent wedges.

Combine the onions and tomatoes in a deep bowl. Tear the basil leaves with your hands.

Season with salt right before serving and gently toss using your hands or a spoon.
