"4-in-1" Shortbread Cookies

Method

In a bowl, combine room-temperature butter or margarine, eggs, powdered sugar, vanilla, and baking powder. Mix well.

Gradually add the flour and knead into a soft dough. It should be tender, non-sticky, and have the texture of an earlobe.

Divide the dough into 4 equal portions.

Add pistachios to the first portion, cocoa to the second, almonds to the third, and chocolate chips to the fourth. You can also use other mix-ins to taste.

Shape the cookies as shown in the video, combining the different dough portions together.

Wrap the log tightly in plastic wrap or a bag and place it in the freezer for 15 minutes to let the dough firm up slightly.

Once the dough has firmed up, slice it into individual pieces with a knife.

Place the cookies on a baking sheet lined with parchment paper. Bake in a preheated oven at 175°C (350°F) for about 15–17 minutes.

The cookies might still feel slightly soft straight out of the oven, but they will firm up and become delightfully crumbly as they cool.
