Method

Whisk together the egg, milk, and sweetener in a bowl until smooth.

Add the rice flour, cocoa powder, baking powder, and a pinch of salt—mix until you have a smooth, lump-free batter.

Preheat a skillet. Drop portions of the batter (2–3 tbsp each) to form layers about 10 cm in diameter.

Cook for 2–3 minutes on each side until springy and dry on top. Let the layers cool.

For the cream, whip all the ingredients together.

Assembly: using a 10 cm pastry ring or simply on a plate, layer as follows: cake layer — cream — cake layer — cream, and so on. The top and sides do not need to be perfectly smoothed out.

Chill the cake in the refrigerator for at least 2–3 hours (4–6 hours is even better) to let it soak and set.
